SALT is a collaboration between Kuwaiti chef/gardner, Maryam Al Nusif (aka Mimi) and Kuwaiti graphic designers, Danah Behbehani & Ala’a Ali Reda. The space invites visitors to experience an ancient culinary technique that was used to prepare poultry, fish and meat evenly and with little loss of moisture. By coating food with a layer of salt, heat and moisture are trapped under a sealed crust, retaining natural flavors in the food rather than allowing them to escape.

A reinterpretation of this ancient technique, SALT will allow people to experiment and prepare their own food by adopting this salt-crust method, using locally grown vegetables instead.
